Zesty Cowboy Caviar

An easy, creamy cowboy caviar can be made by mixing a can of corn and a can of Rotel with a creamy blend of mayonnaise, sour cream, and ranch seasoning, plus shredded cheese. The dip is a perfect match for Doritos.
Ingredients
1 can (15 oz) Mexicorn, drained (or 1 can whole kernel corn with chopped bell peppers)
1 can (10 oz) Rotel (diced tomatoes and green chilies), drained
1 cup shredded cheddar cheese
one red onion diced small pieces
1 cup sour cream
1 cup mayonnaise
1 packet ranch dressing mix, or 3 tablespoons homemade ranch seasoning
Optional additions: Diced jalapeños, chopped cilantro, or diced avocado
1 bag of Doritos, for serving
Instructions
In a large bowl, combine the drained corn, drained Rotel, shredded cheddar cheese, and green onions.
In a separate medium bowl, whisk together the sour cream, mayonnaise, and ranch seasoning mix until smooth and creamy.
Pour the creamy dressing over the corn mixture. Stir gently until all the ingredients are evenly coated.
Cover the bowl and refrigerate for at least one hour to allow the flavors to meld together.
Just before serving, you can add optional ingredients like avocado or cilantro.
Serve chilled alongside a bag of Doritos for dipping.
